Filipino Talaba (Oyster)


Zamboanga Sibugay in the south is known as the Talaba Capital of the Philippines. They hold an oyster festival and the world record for the longest oyster grill. As in many other parts of the world, oysters are considered an aphrodisiac in the Philippines.

"Kilawing Talaba"

That is one of the hardest part in preparing oysters. Kinilaw is also known as ceviche or soaking in vinegar or lime to pickle it. Then you put spices to make the dish more appetizing.
